ready for the oven. I was feeling kind of headachey and weak from sugar detox, and nervous that this was going to suck, but it was absolutely delicious and satisfying.

The crust is made of quinoa, black-eyed peas, chickpea flour, garlic, and spices, run through the food processor. It was surprisingly delicious, with a biscuit-like texture. It’s topped with sweet pepper hemp pesto, red peppers, cauliflower, sweet onions, grated beets, and grated yams.
