Despite the new school, they had to bus all the New City 6th graders to Congers, plus at least one Chestnut Grove section. The Congers 6th grade was there too. Homage to Horcubee

I ran across this photograph which looked SO good (link works when page is opened)! I had all the ingredients on hand (or a reasonable substitution), so I made an awesome dinner. I roasted the "Golden Nugget" squash which gave the polenta a deep, rich flavor and a beautiful color. I had "Stregonta" shelling beans (an Italian variety from my farm share), so I cooked them with thyme and garlic in the veggie stock. The photos aren’t nearly as good as Horcubee’s, but I bet the flavor was just as good. I did not use the Rachel Ray recipe Horcubee links to, although perhaps I should have. My final dish was a little too garlicky (yes, there is such a thing).
