Don’t get me wrong, I really like Johnny Depp. But with the exception of his take on Batman, I can’t think of any live action project Tim Burton has done without Mr. Depp in a lead role. Why not Christopher Walken as Willy Wonka?

Of course. He has directed and produced many films without Depp since 1990. He has directed and or produced 17 feature films since 1990, including the upcoming Alice in Wonderland and Depp in in 6 of them. That’s not even half with Depp.
